Easy Prep-Ahead Breakfast by Lucy Andrews
As we return to the swing of school and early starts let’s make our mornings easier with this tasty breakfast, that can be made with – as always in this article – store cupboard and freezer items and an easy to remember rule, purchasing available items inexpensively from Evermoor Hub.
overnight oats
So I had ingredients readily available for a choice of two flavours (Chocolate and Carrot Cake) I bought the following items for a total of £9 for 18 or more portions:
- oats
- 3 x long life milk
- hot chocolate powder
- peanut butter
- marmalade
- frozen shredded carrot
- frozen berries
Using hot chocolate powder instead of cocoa means we don’t need to add anything to sweeten the dish, similarly using marmalade for the carrot cake flavour.
I used some cinnamon and dried fruit from home for the carrot cake flavour.
Method
The easy rule and why you don’t need to stick to recipes is, per adult use: 1/2 cup oats : 1/2 cup milk : 1/2 cup fruit/filling
You don’t need to buy cups specially for this, as long as the volumes are the same this will work.
Chocolate Oats
1/2 cup oats
1/2 cup milk
1 tbsp hot chocolate
Carrot Cake Oats
1/2 cup oats
1/2 cup milk
1/2 cup grated carrot
1/4 tsp cinnamon
1 tbsp marmalade
1 tbsp dried fruit
Mix the ingredients well, tip some frozen fruit over the top and cover. Place in the fridge until morning.
Add peanut butter to the chocolate oats in the morning if you like. Add any other toppings like seeds / nuts / fresh fruit / yoghurt.
If you’d like to serve the oats warm tip into a pan and add extra milk bit by bit.
