3-2-1 SHORTBREAD RECIPE

This is probably the simplest shortbread recipe that you will ever find. All you need to remember is 3-2-1…
3 parts Flour…
2 parts butter…
1 part sugar…
In this recipe we are using:
- 300g plain flour
- 200g cold butter, diced
- 100g caster sugar
- Preheat your oven to 180 degrees (gas mark 4)
Combine all ingredients together into a dough, but please be gentle and don’t over work the mixture.
Method
- Cover the mixture with cling film and allow to rest in a cool place for 1/2 hour before use.
- On a floured surface, roll out the dough with a rolling pin to desired thickness (were making cookies today) before cutting with a biscuit cutter and placing on a lined baking tray.
- Cook in a hot oven for 8-10 minutes or until golden
- Remove from oven and allow to cool slightly before transferring to a cooling rack (biscuits will be still quite soft when first baked, trying to move them too early can result in the biscuits breaking)
- Allow to cool, eat as they are or let the kids decorate to perfection
Makes approx 10 – 12 biscuits depending on size
Recipe variation:
Jam Drops, Nutella Bites & PB & J Dreams
- Use the same dough recipe, roll small balls and then flatten with the palm of your hand.
- Place the dough balls on a lined baking tray and make a small indentation in each biscuit with your thumb.
- In the indentation spoon a small amount of your favourite jam, Nutella, peanut butter or a combination
- Bake for 8-10 mins @ 180c
- Allow to cool and serve.
Makes 15-18 bites
