Summer Salad
Liven up a summer meal with this beautiful salad. It’s versatile as you can change up the fillings and toppings to suit what’s in your fridge and you can stir fry it if the weather does a U-turn and you fancy something warm! You can slice everything by hand or use a food processor.
I get the dressing and topping flavours from the Asia International in the Concourse. There’s always a good variety you can choose from and it’s great to support another local small business.
Serves 2 (good appetites)
Salad
1 x courgette – grated or spiralised
1/2 x red pepper – thinly sliced
1 x large carrot – grated or spiralised
Handful x mangetout / supersnap
1/2 pack x babycorn – sliced into discs
1/3 x small red cabbage
2 x spring onions – diced
15g x fresh coriander
2 tsp x sesame seeds
Dressing
4 tbsp x sesame oil
4 tbsp x rice vinegar
2 tbsp x maple syrup
1 x lime – juiced
25g x ginger – peeled and grated
Salt to taste
Black pepper to taste
Directions
1. Prepare your vegetables – keeping the red cabbage separate – and mix them together.
2. Chop the spring onion and coriander. Mix them in the with vegetables or sprinkle on the top.
3. Make your salad dressing in a jug and whisk to taste. It will be very punchy but don’t be alarmed! Pour out a third into another container and add a splash of water. Remember the flavours are strong now but it’s got a lot of salad to coat.
4. If you’re not eating it straight away pop the cabbage in the bottom of your container then your mixed vegetables and keep the dressing in a little pot. You could use a large glass jar and shake it up a few minutes before serving.
5. If you are to eat it straight away mix everything up together and leave to rest for a few minutes.
6. Enjoy!
Toppings Ideas
- 150g x meat-free chicken pieces, 25ml x soya sauce / gf soya sauce, 25g x chopped ginger – Sauté with a little oil
- 80g x toasted cashews – Toast in dry pan for a few minutes until golden (be careful not to let them catch)
- 150g frozen Edamame beans – Salt to taste – Boil for two minutes and cool under cold water straight away
